There was a table next to mine that had only 2 people. So it would've been nice if I had a chance to join that table. I think the staff could be more flexible next time in terms of seating since cancellation and no-show are quite common.
The biggest problem with doing that, to put it shortly, would be timing. For any of the tables where folks left early, we couldn't actually populate those tables until after every other person in line is seated. Then, once that's done, we could get a count and see which tables are empty and open them to will-call folks. The problem with that, though, would be that it would double or triple our seating time, making the wait even longer!
... which, unfortunately, means that stratified timing and on-site will-call do not mix, in this case.
